The Domaine de Rombeau has belonged to the La Fabrègue family for several centuries and has kept its identity by keeping the unity of the farm in Rivesaltes. In the 90s, Pierre-Henri de La Fabrègue created an authentic Catalan inn in the very heart of the family cellar with the wines of the production offered at the price of the sales cellar.
Located in the Roussillon plain, this vineyard is lulled by the Tramontane wind all year round. The grapes, picked at optimum ripeness, are subject to rigorous selection. Direct pressing. thermo-regulated fermentation at 20°C.Mutation with neutral alcohol.Oxidative ageing in stainless steel vats for 2 years then 4 years in oak barrels.
Beautiful, brilliant amber colour. Fine and delicate nose of ripe fruit, acacia honey, and spices. Delicate notes of apricot nuts, orange and prune. Ample, full, suave mouth. Dried fruits, grilled almonds, candied citrus fruits and orange zest follow one another for real pleasure. Serve chilled (6°-8°C) with pan-fried foie gras with figs or as a dessert with nougat ice cream, fruit focaccia, and plum tart.
