We let a blend of Lactobacillus cultures and Brettanomyces yeast do their thing for 12 months in oak barrels. The results are beautiful! Loaded with flavours of passionfruit and bright citrus notes, but this beer is all about the funk, and there’s plenty of it! Dry and acidic with a touch of tart apple.
