
CANALS NADAL CAVA BRUT NV
By winemaker Joan Miquel Canals, this classic Cava blend of 40% Macabeu 40% Xarel·lo and 20% Parellada comes from soils of calcareous gravel and lime clay nature.
Grapes for this are hand-picked then vinified separately by variety and parcel which are later blended prior to bottling. Secondary fermentation is made via the traditional (Champagne) method of production followed by 12 months sur lie ageing prior to disgorgement. 7g/L dosage is added after disgorgement which leaves the wine with a 6.3 g/L residual sugar content resulting in a wine which is pale lemon, has a fine bouquet of white floral and fruity (fresh green apple, pear, peach) characters. The palate is smooth and elegant in texture, with the touch of sugar added at the disgorging balancing the acidity. Serve at 6-8oC.
