CASCINA ADELAIDE BAROLO 4 VIGNE
After a highly successful engineering career, Amabile Droco finally acted upon his lifetime dream by purchasing an old farmhouse and vineyard in the heart of Barolo. He did this as he wanted to demonstrate not only the fascinating qualities of Barolo, but also the diversity of the terroir within the Barolo DOCG. So far he has steadily grown the number of vineyards he owns and controls to eight out of the ten Barolo "Crus", with the goal of completing his dream when the right sites become available. To ensure the individuality of the wines shines through, no herbicides are used on the land and the harvesting and sorting is all done by hand. Native yeasts and minimal sulphur are used in the fermentation too, creating delicious complex wines full of orange skin, plum and tobacco notes with incredibly vibrant tannins and excellent balancing acidity.
From "4 Vigne"- 4 different vineyards on La Morra, Elevetian and Tortonian soil, guyot grown on a countertrellis system and all harvesting and vineyard work is done by hand.
The grapes are sent to a drying room for 12 hours to remove excess moisture before being gently crushed to avoid the stalks tainting the must. Fermented at 28 ° C with continuous but delicate pumping over. The Marc is macerated for 300 hours before malolactic fermentation in wooden barrels.
Tar and roses all over this one, with truffle complexity on the finish. I could wax lyrical about this wine all day, but youll have to try it for yourself to see what Im talking about. In short it was picked out as one of the wines from a recent tasting for us.
