Chateau L'Ermitage Sainte Cecile Costieres de Nimes 2016 £16.45
Château l'Ermitage was founded in the XIth Century by the hermits of Sainte Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Owner Jérôme Castillon and restricts the use of oak influence as much as possible and new oak is not used.
For this wine 35 year-old vines grow on galets roulés gris (large alluvial pebbles formed by the Durance, the river which ran through the valley well before the river Rhône). Grapes are cooled and cold soaked for three days with regular delestage during the thermoregulated fermentation. The wine is aged for one year in 400l French barrels before release.
Here Jérôme's cautious, less-is-more approach to oak reveals itself in a wine which is immediately soft and developed, yet without overt oaky tones.
Ideal with full flavoured meat such as peppered steak or game. Also a good accompaniement to mature cheeses.
