EDMOND BRIOTTET CREME DE CASSIS DE DIJON
All of Briottet crèmes de cassis (blackcurrant creams) are made from the most prestigious blackcurrant variety the Noir de Bourgogne variety. The berries we use are harvested exclusively in the Côte d'Or department in Burgundy. The blackcurrant berries are macerated in a water and alcohol solution for about 10 weeks so that all of their flavours are extracted from them. The alcohol-containing juice thus obtained is called "infusion". This infusion is the basic ingredient which goes into crème de cassis, to which we add white sugar.
Their ancestral know-how means that they produce premium-quality cassis and this enables them to recommend that this product be employed for such diverse uses as cooking, desserts and, of course, the ever-popular white wine-blackcurrant liqueur drink.
