Garagiste Le Stagiaire Mornington Peninsula Pinot Noir 2016
A native yeast fermentation into small open-top fermenters with a total time of 25 days on the skins. Gentle cap management, with light pump-overs and a few plunges. Matured on the lees for 10 months in 15% new French 300l hogsheads. Bottled unfined and unfiltered.
A powerful nose of plums, clove, cinnamon, cranberry and raspberry complimented by aromas of liquorice and clove. The palate is focussed, elegant and long with refreshing acidity and lots of fine intense tannin. Best with rare roast beef or a good steak!
