Jade represents living organisms of the sky and earth; the sequence consists first of cultivating the land, then right through to harvesting the grapes. The wine produced is the culmination of a complete process of working the land by the winegrower. It is only after this stage that delicate alchemy can begin between the vat house and wine cellar. Brothers Jean-Claude and Jean-François Berrouet provide their valuable guidance for producing this lovely wine.
