Misiones de Rengo Vineyard believes that the essence of wine lies in its terroir, which implies a combination of soil, climate and men. Starting with the work carried out in the vineyard, followed by the selection of grapes through the winemaking and bottling processes, they keep to a philosophy that stresses the need to be rigorous and respectful with the grapevine.
Alcoholic fermentation took place in stainless steel tanks using advanced techniques such as low-temperature fermentation and lees manipulation. Some lots underwent a pre-fermentation maceration to extract the full aromatic potential from the grape skins. Once the alcoholic fermentation was complete, the wine remained in stainless steel tanks at 10ºC to preserve its intense fresh citrus characteristics. Once bottled, the wine is kept in temperature and humidity controlled cellars for a month prior to release.
This Sauvignon Blanc has a vibrant, fresh and fruity aroma. The nose is distinctive and lively, with notes of tangerine, herbal smell, pineapple, melon and apple.
On palate is tasty and fresh, with an excellent alcohol-acidity ratio, and the flavor that lingers reminds us of fruits such as tangerine and melon. Its finish is subtle, long and pleasant.
Given its freshness and excellent acidity ratio, it is ideal to drink as an aperitif or to pair with mild cheeses with balanced acidity, such a fresh, goat or Manchego cheeses; and green salads, lettuce and celery, toasted nuts and citrus vinaigrette. It is also ideal for fish, such as fried sea bass and pomfret, ceviche, sushi and raw shellfish, such as oysters, sea urchins and clams.
