REMO FARINA AMARONE SELEZIONE SPECIALE 2007
Selezione Speciale is a special reserve of only 2500 bottles (each bottle has its own number) produced in an extraordinary year. Climatic conditions as they were in 2007, mean this is a “historic” vintage where the revered Selezione Speciale can be produced.
The carefully selected grapes all come from a single vineyard located in a hilly area in Mazzano di Negrar, in the heart of Valpolicella Classico region, at an altitude of 400m. The area is particularly favorable and the yield of grapes per hectare is lower than average (about 30 quintals per hectare).
The grapes which are harvested, exclusively by hand, are all local grapes of Valpolicella Classica (Corvina, Rondinella and Molinara); they are left to dry for about 3 months at a controlled temperature of 18° C and 70% humidity before being pressed and vinified. Fermentation is very long and slow and lasts for about 40 days at a temperature of about 18° C.
The wine is then aged in oak barrels: 50% in Slavonian oak casks of 5 hl for 4 years and the remaining 50% in French oak barriques for 2 years. In the end, everything is blended in stainless steel tanks and refined for 2 years before being sold.
This wine is red garnet with orange edges in the glass with an intense bouquet given from a mix of fruit (sour cherries, plums), spices (cinnamon, ginger) and tobacco. On the palate, it is full-bodied, complex, harmonious, well-balanced and enveloping. An excellent accompaniment to meats and cheeses, or just sipped after dinner in good company.
