It's in a distillery like no other in that Dr Ulrich Dyer, the creator of the Symphonia range of spirits, combines his knowledge of science with his love of nature to create three unique spirits - Symphonia Dry Gin, Armagh Apple Gin and Summer Fruit Cup.

Uniquely using a cool distillation method, it allows distillation at room temperature which preserves flavours and fragrances which would otherwise be destroyed during traditional distillation. Using this technique gives Ulrich a wider palette of flavours to use in the spirits and it has the additional benefit of using significantly less energy to produce these gins. Estimated at 2% versus traditional copper pot methods, which is greatly significant in the current climate.
