Symphonia Gin - a tale of innovation, entrepreneurship and a true sense of place.

It's in a distillery like no other in that Dr Ulrich Dyer, the creator of the Symphonia range of spirits, combines his knowledge of science with his love of nature to create three unique spirits - Symphonia Dry Gin, Armagh Apple Gin and Summer Fruit Cup.

Ulrich spent 30 years in a career working in chemistry laboratories discovering new medicines but his desire to break away and do something creative and entrepreneurial within the food and drink sector was overwhelming. He was attracted to the production Craft Gin but he needed something which would set his gins
apart from all other gins. He thought about extracting the essence of local produce in the most environmentally friendly way possible.

He discovered a process which would really make his gin stand out – named cool distillation it allows distillation at room temperature which preserves flavours and fragrances which would be destroyed during traditional distillation. Using this technique gives Ulrich a wider palette of flavours to use in the spirits and it has the additional benefit of using significantly less energy to produce these gins. Estimated at 2% versus traditional copper pot methods, this is greatly significant in the currant climate.

Symphonia Dry Gin is a beautiful harmony of flavours, starting with an upfront citrus burst, the middle notes are fresh and herbaceous, followed by an incredibly long length ending with a peppery crescendo. This is a smooth fresh gin ideal with tonic or as a martini.

Winning Best Irish gin at the 2019 awards highlighted the outstanding quality of the gin and proved to Ulrich that he was on course to making his dream a reality.

Symphonia Apple Gin, is truly unique and is made using 100% of Armagh Bramley Apple. Juniper and crisp apple don’t sound as if they should work on paper but in the glass they combine beautifully. The second offering in the range also stood out at the awards and added the bronze medal to the collection and more recently winning bronze at the world gin awards. Drink neat on the rocks , as a wonderful twist on a gin and tonic or create bespoke cocktails with this ground breaking extraordinary gin.
