"Light" and "stone" at the origin of everything in the lands of Salento. With its purely Mediterranean character, the "light" penetrates the secret recesses of the earth, warms the brick red of the soil, extracts the scents from the sea, purifies and concentrates the loose bunches. The "stone", hard and indestructible, but also tender and mouldable, emerges from the underground in search of breath; draws the boundaries of the districts in the dry-stone walls, and on the plains covered with secular trees, is secretly intertwined between the trulli.

In these enchanting atmospheres, old vine saplings await silent, motionless in the same place for almost a century. They survive with difficulty as time goes by, drawing warmth from the "light" and refreshment of the "stone". And one wonders again for what strange principle of nature, or by what miracle, in spite of tiredness and hardship, these old plants still manage to give us the most precious fruits.
