
This month's yoyo selection red brings together the best of Northern Italian wine-making skills and the unique flavour combination of the varieties local to the region.
This red is made of a combination of Corvinone, Corvina and Cabernet Sauvignon varieties which are picked then partially dried over the space of a few weeks so they can slightly wilt as the 'Appasimento' process takes place. The grapes are then pressed and aged for 6 months in large oak to give a wine with a silky, fruity palate showing off red and black cherries and plums with soft tannins and a lingering finish.
This will pair brilliantly with any of the yoyo pizza range, but our favourite is the Mamma Piccante and its hot honey which is a great compliment to this style of wine.
